So you think you can Truffle?



I am a big fan of chocolate and one of my favorite chocolate delights is a truffle.

Enter truffle class 101—the class took place in a sleek downtown loft that is also home to Learn about Wine.  Paula Page who has vast knowledge on wine paired this stellar truffle class with exquisite wine choices poured. Pastry chef/owner Clemence Gossett whose culinary training program is located in Venice, is a self-taught baker who melts, whips, and rolls these little balls into a decadent melt in your mouth treat. She even shared some trade secrets, How to “infuse” flavors such as lavender-scented honey, cardamom or chili spice. Some of Clemence helpful tips were finding good copper saucepans, local shopping and where to find fine ingredients like a block of Valrhona chocolate which is one of her recommends given her Parisian background.
